Tis the season for comfort food and fall foods. First thing I think of is pumpkin. Pumpkin this, pumpkin that, so I decided to whip up my own concoction as I so often do, totally experimental mind you, and it was a hit. I call it my Pumpkin Pie Whip Dip. Why? Well, it’s kinda like pumpkin pie, I whipped it up, and it’s a dip…. pretty complicated, right? The best part, seriously, I wanna say it’s like almost 0 points if you’re a Weight Watcher (I think!… remember I used to be a leader for quite some time, but that was quite some time ago!)
So here’s the skinny on the Pumpkin Pie Whip Dip:
- 1 can pumpkin
- 1 tsp pure vanilla extract
- 1/2 c brown sugar
- good sized sprinkle of pumpkin pie spice
- good sized sprinkle of cinnamon
- 1/2 tub fat free Cool Whip
I emptied the pumpkin into a bowl and poured all the sugar and seasoning into it.
After mixing that up, I folded the cool whip into the mixture.
Voila! Served it up with apple slices.
My kids were ANXIOUS as I was making it going, “can I try??? can I try???” So finally when it was done, they couldn’t wait to dive into it, and they LOVED it. I served it with apple slices, but you can also serve it up with ginger snaps or even graham crackers. Mmmmmmm so good!
An easy treat that’s easy on our waist!
