Sometimes I think I’ve done a huge disservice to my family by raising my kids to eat their food groups in such a way that THAT is the way we eat around here all the time if I want to cook the same thing for everyone. It’s not bad thing, but it does limit me because they won’t eat the fruffy things, the casseroles, the crock pot things (rarely). … all of which that I just mentioned would make MY life as mama bear a heck of a lot easier when it comes to meal prep and my time and doing thing in advance.
But anyways, enough of my rant and what goes down over here… THIS my friends is one of the most SIMPLEST whip up alternatives to hamburgers or meatballs. Consider them almost a blend of both.
These are mild flavored and go great with any types of sides… baked potatoes, sweet potato fries, french fries, salad, corn on the cob, any kind of vegetable really. I throw all the ingredients in a bowl, whip em up, throw em on the stove and in 15 min they’re done. I’ve been buying buffalo lately, but my family can’t taste the difference. So let’s get cooking!
You will need:
* 1 lb buffalo meat * 1 egg* just less than 1/4 c. milk (I usually don’t measure, I just splash it in there)
* splash of Worcestershire sauce
* 1/4 c. italian breadcrumbs or panko
* crazy mixed up salt, garlic powder, Cavender’s Greek Seasoning… all of them just thrown in (remember I don’t measure)
* a nice handful of fresh chopped parsley
* lemon to squeeze on when it’s done
First, combine all of the ingredients in a mixing bowl with your hands. Then set the stove on med high, spray with non-stick spray (because you will see how little to NO fat will come from these, it’s SO great!).
Then shape the patties into ovals that fit into the palm of your hand.
Let them cook on the stove for about 5 minutes, keeping an eye on them to not get burned, then flip them over for another 5 minutes or so.
I like to have the oven on beside them at 350 so that after the second side has flipped for its 5 minutes, I throw them in the oven to keep them warm and cook the insides as well. The thing we don’t want is a nice thick patty and the outsides all nice and crusty and the insides to be raw. So I throw them in there for another 5 – 10 minutes or so, as I finish prepping the rest of dinner.
Once I pull them out, I slice up my lemon and squeeze fresh lemon all over it. It’s SO yummy and tasty and SIMPLE.
I sometimes love melting cheese on top of them and eat it like that with a fork. This week I wished I had some fresh mushrooms to sauté in some wine, then layer with cheese…… mmmmmm.
My son of course uses ketchup…. as he does on most things.
But really, they are pretty much perfect just like this! It’s not a hamburger. It’s not a meatball. It’s a beefteki. {wink!}
