You know every so often I get a wild hair and when I travel, I get the bartender to make me their signature cocktail to share with all of you.
Such is the case for today’s drink. I snatched up the darling Amba from Seven at The Ritz Carlton in Grand Cayman.
Caramel Popcorn Old Fashioned
- Caramel Popcorn Infused Bourbon*
- Scotch
- Salted Caramel Syrup**
- Dash of Orange Bitters
In a glass over ice, pour equal amounts of bourbon and scotch. Pour in syrup and bitters. Stir well. Strain drink and pour over ice. Serve with a side of caramel popcorn.
*To Make the Caramel Popcorn–Infused Bourbon: Warm bourbon and caramel popcorn in a small saucepan over very low heat (you don’t want it to boil away), stirring frequently, for 15 minutes. Strain through a fine-mesh strainer and discard popcorn. Infused bourbon can be kept in the fridge up to one week. Or try THIS. (she uses rum but I think it still could work!)

This sounds SO good for fall, doesn’t it? Aside from a bit of prep work of the ingredients, it’s really not very difficult at all. Once you prepare that bourbon and have that syrup on the side, it’s easy. Now…. I’m curious if I got salted caramel ice cream syrup if it would work! HA!
This makes me totally ready for fall. I even pulled out one of my new tops I got for this fall, and the color is rich and beautiful yet still light enough for our still not-so-cool Oklahoma days! And it’s under $25!
