Today’s concoction is a dessert in the form of a cocktail. We all know that famous frothy fruity salad, right? Why not make that a drink? Well that’s what this is. Kinda sorta!
I’m in the mood for something a little more fun than just the swanky martini type drinks I’ve been serving up and this fits the bill. Not only that, with the weather we’re experiencing, I really don’t know if I should be thinking spring yet or keep it still winter. Who knows! So I thought this will just bring a smile to everyone. And for the little ones, omit the liquor. It’s still THAT good.
Ambrosia in a Glass
- 1/4 c frozen pineapple chunks
- 1/4 c ice
- 1/4 c white rum OR Malibu
- 1/4 c coconut cream
- 1/4 c orange juice
- 1 splash grenadine
- 2 – 3 Maraschino cherries, stems removed
In a blender add frozen pineapple, ice, coconut milk, orange juice and grenadine. Pulse it to blend. Add the cherries and pulse a few more times but not to puree them completely. Pour into a fun cocktail glass, compote, or sherbet glass.
Garnish:
- whipped cream
- coconut flakes
- skewer
- marshmallow
- pineapple chunk (let one thaw from your frozen ones)
- Maraschino cherry
Top with whipped cream. Sprinkle with coconut. Skewer the marshmallow, pineapple and cherry.
Ok does this not sound like a party in your mouth and in your tummy? You can make this literally ANY time of year. I think it’s great for hot weather, it’s great for holidays and festive events. I mean lets face it. Who would turn down this fluffy yummy treat, right?
I’m actually going to put mine in the freezer because I’m being 10000% OP on squeezing into this formal dress for an event on Saturday night. Gotta love that when all of a sudden, you realized that few inches of fluff you gained over the winter will make you look like a sausage squeezed into you your gown. Nice! HA!
