Today I had my women’s networking luncheon that I host monthly in my home, and I always want to serve these great women something yummy, something that isn’t over the top for me to make with my busy-ness, and something SIMPLE. Let me tell you, when I saw some go for second helpings AND saying WHERE IS THE FOOD FROM? I KNEW it was a hit!
I don’t even have a name for this… Actually, that’s how I do most of my cooking I hate to say. It’s some kinda tortellini concoction of a antipasto salad with chicken. Here’s what I threw together….
1 bag of frozen tortellini, cooked and rinsed
some cooked chicken from the deli that I tore up into pieces
2 cans of black olives, rinsed
3 cans of artichoke hearts rinsed
2 jars of sun dried tomatoes
baby mozzarella balls
the SECRET SAUCE! … I jar of store bought pesto mixed with 1/2 bottle of lite italian salad dressing.
Toss it all. Simple. Easy. DELISH! And literally a throw-together main course perfect for a ladies luncheon. And I have some leftovers…. anyone wanna join me for lunch today? It’s ALWAYS better the second day!
