Spring break is here! Oh boy! I’m staying home for a few reasons. One, frankly, I feel like life is always hustle and bustle, that traveling and rushing around to go to crowded areas all to come back and rush to get ready to go back to routine and kids to school exhausts me. I am looking forward to RESTING myself. Maybe even sleeping in a few days. I deserve it! {wink!} Two, my oldest child, which I can’t believe this is happening, has drivers ed over spring break. SAY it isn’t SO! So there you go. My spring break is at Casa de Gianos. HA!
But in the spirit of spring break, and I think of beachy fun, today I’m sharing a fun twist on a daiquiri. You can blast this in a blender, but I made mine on the rocks and it’s OH so good. The Mister said this is one of his favorites! With Malibu stocked in your bar, this is a simple drink to make with fresh limes and simple syrup. What an amazing combination this makes.
Coconut Lime Daiquiri
- 1/2-ounce simple syrup, recipe follows
- 2 cups crushed ice
- 2 oz coconut rum
- 1 oz freshly squeezed lime juice, strained of pulp
- Make the simple syrup: Place 1 cup sugar and 1 cup water into a small saucepan over high heat. Bring to a boil. Decrease the heat to medium and cook, stirring occasionally, until the sugar is completely dissolved, approximately 3 to 5 minutes. Remove from the saucepan and allow to cool completely. Syrup can be stored in an airtight container in the refrigerator for up to a month.
- Place 2 cups of crushed ice into a cocktail shaker. Pour the coconut rum, lime juice, and simple syrup over the ice, cover, and shake well. Pour into your glass, including the ice. Serve immediately.
Makes one cocktail.
I make syrup and keep it in the refrigerator to have ready to go for whenever I need it. It’s one of the easiest things to make. Super simple.
