In trying to keep with my health goals and keeping life simple and easy, I thought I’d share one of my favorite little meals. You’d think this is the perfect breakfast, and it is, but its soooooo easy, it could be a dinner you whip up in less than 5 minutes! Does it get better than that? No way!!
Quick spinach omelette.
I first saute fresh spinach w some cooking spray,
I use one whole egg along with egg whites so I get lots of protein and get all the great health benefits if the yolk.
After I’ve poured the egg mixture right over the spinach and let it set for a bit, I sprinkle the teensiest bit of cheese for flavor.
And voila!
Spinach is soooooo great because it does SO much for you! It’s low calorie for a large portion so that means great weight control. It can help protect you against cancer, help reduce your blood pressure, prevents cataracts, improves cardiovascular health, improves brain function, and finally, DRUMROLL, it helps with anti-aging!!!!! Now, in addition to being healthy, who doesn’t LOVE to look good????
