I whipped up a little din din on the fly, of course didn’t think a thing of it. Like, the way I make most of my things, it’s really a splish of this and sprinkle of that, because that’s kinda how most of us Greeks do it. And such was the case last night. But I posted a picture on instagram last night, and I thought I need to spread the love and share this one.
I think the key that made this so good was 2 things. 1. The noodles were like baby fine. Nothing big and thick and long and wide. 2. They were egg noodles. I think. I threw the package away and I think they were some imported kind, but I ran out to the store to find something that I think would do the same job. But I do believe that is the key. Egg noodles vs regular pasta.
Baked Chicken and Angel Hair
- * Chicken Thighs (I used bone and with skin)
- * Olive oil
- * Lemon
- * Jane’s Crazy Mixed Up Salt, Cavender’s, Garlic powder
- for the pasta
- * 1 c. Angel hair egg noodles
- * 2 c. Chicken broth (I used boiling water with bullion)
Set the oven to 425. Put the chicken in a baking pan. Drizzle with olive oil and squeeze fresh lemon all over them. Sprinkle with seasonings on both sides as well. Bake till cooked in the oven, uncovered. Remove from the pan and place in a side dish and keep warm. The pan should have juices from the cooked chicken
Heat the broth (or I boiled water and added my bullion) and poured it into the pan that had the chicken. Put the pan BACK in the oven to get it to the almost boiling point. Then add the noodles and spread across so that they are evenly immersed in the liquid across the pan. My measurements are APPROXIMATE. Just sayin… Put the pan BACK in the oven for about 5 – 10 minutes max, eyeballing them. You don’t want them overdone because they will be kinda mushy. But what is MY favorite part is the top that gets all crispy and crunchy!
Voila! Serve with the chicken and dinner is done. Add a salad or some broccoli or whatever vegetable your family will eat. Done.
So the pictures came AFTER the food was half eaten. I decided I had to share this hear after a few requests on Instagram. … note: that is why no pics of the food prep… when we started in on those noodles, it was like OMG… that’s a MUST share.
What made it so good? I think those noodles that are baked with the juices with the chicken makes it so rich in flavor and melt in your mouth wowzers. The crunchy part on top doesn’t melt in your mouth, fyi. It’s crunchy. And it’s my favorite part. Is it very ladylike to eat? Probably not. I’m glad I didn’t video that one! But it’s REALLY yummy.
Ya. What diet? um ya. This is not diet friendly. Watch your portion. You’ve been forewarned. Just do a few more crunches that day!
Easy? yup. Simple? you bet. Delish? of COURSE! #onpurpose? Always! {wink}
