If you’re a personal friend of mine on Facebook, you might have recently seen the discussion on brussel sprouts. This was a pretty lengthy discussion, believe it or not, so this post has had peeps I’m sure ANXIOUSLY awaiting it, at the edges of their seats! {ha! seriously NOT!} Exciting stuff, I know, right? Well, I’m a newbie at this brussel sprouts thing, so I ventured out and purchased some, especially since my focus is on getting healthy and shedding a few pounds. I’m trying to eat my green veggies! {wink!}
I know there are jillions of recipes for brussel sprouts out there, but I threw together (the way I always do) my own thought and put together my own concoction of what I thought would be yummy.
Irene’s Roasted Brussel Sprouts
- fresh brussel sprouts
- olive oil
- balsamic vinegar
- slivered almonds
- salt
Wash your brussel sprouts. After you wash them, peel off the outer tough layers of leaves and cut off the bases. Then quarter. This might seem elementary, but for a newbie, I had no idea the proper way to work with these cute little “bite sized cabbages”. (That’s what they look like!)
Just like I always do, I don’t measure (sorry friends who MUST… just eyeball it!). Add in slivered almonds and toss with olive oil, balsamic vinegar and salt.
Spread single layer on a cooking sheet sprayed with non-stick spray. Bake at 350 for 40 min or until golden.
I kinda lost track of time! HA!

Ok, what did the fam think? I love them, and our family does too-even the ones who were former BS loathers. Haaa! Love your recipe, and, personally, we like them when they’re toasty!

So did we!! Peter and I LOVED them. The kids, not so much. But I think they must acquire a taste for em. But hey… I converted one guy! That’s good for me! 😉

i stopped by Irene’s house the day she made these. They were yummy!!! Peter can not say he didn’t like them, he ate them with us as we all chatted. She was ever so sweet to send a bowl home to my son He loved them!
