It’s no secret if you haven’t seen by now, I’m really focused and working on shifting my diet to a lower carb life. It’s trickling down to my family and it’s exciting to see the results we’re getting. So as I’ve been planning meals, a Taco Tuesday thought was one that came up. And I immediately thought how much I love Pei Wei lettuce wraps, and I thought, I could do the same concept with tacos.
Duh? Genius.
Well, sometimes the most obvious and simple things are things we can easily overlook. Like a lettuce wrapped burger for example. We still get the same yumminess we’re looking for minus the carb factor. Same with this.
No Carb Taco Lettuce Wraps
- Taco meat (or use shredded chicken or fajita beef)
- Taco fixins to your liking- guacamole, avocados, chopped tomatoes, pico de gallo, shredded cheese, sour cream
- Bibb lettuce leaves
Make your taco meat however you traditionally enjoy it. I sometimes add salsa, extra cumin and cilantro for flavor. I cooked it in my new Red Copper pan. You guys if you haven’t tried these pans, you MUST. They are hands down amaaaaaaazing! There’s no need for oils, they clean with one simple sweep, and frankly, the red pan on my stove is kinda cute! Back to the cooking… If you prefer to use chicken, cook in your taco seasonings.
Place your meat on the open piece of lettuce. Top with your toppings of choice. Voila!
I’m using my new cutting board from Rust & Rot I told you on Friday when I made my Strawberry Pom Mojitos. YUM! That guy can make anything! I didn’t have bibb lettuce and had romaine. It is harder to wrap, I can’t deny, but it works still!
I know it doesn’t seem like rocket science, but sometimes, just simple “Duh? Of course here’s an option for me!” to present itself from another person can be just what we need.
