Meet your new best friend.
The rotisserie chicken from the deli. Why is this you ask? It’s your solution to dinner. It’s one of my favorite life hacks. And we see it every time we go to the store and most of us just pass it on by without thinking about it.
I’m not saying throw the chicken on the table and you’re done. Although you totally can do that, make a couple of side dishes, and that takes care of that.
But I’m talking about taking this a step further. Think about how many dishes you make that call for cooked chicken or shredded chicken. So if you don’t know what to do for dinner, look at what you have in your pantry and refrigerator and see if having this ready-to-go-meal will solve all of your
- Chicken taquitos (substituting the chicken for the beef),
- Chicken quesadillas,
- Chicken enchillada casserole (toss the chicken meat in a bit of seasoning if you want)
- Chicken Tetrazini
- Chicken salad with greens
- Chicken salad with mayo
- Chicken pasta salad with tortelini
- White Chicken Chili
These are just a few suggestions from recipes from The OP Life that you can substitute rotisserie chicken from the deli. Seriously, it’s going to be a HUGE lifesaver for you if you are short on time and need to make a home cooked meal without time to make the meat itself.
