Last weekend we had a serious spike in temperatures that prompted me to lay out. That’s right. In February! Isn’t that crazy? The vitamin D felt so good that it’s gotten me a bit excited for the warmer days around the corner. So today I’m sharing a drink that will take us to the tropics. The Caribbean Martini.
A simple drink with just a few ingredients (which you already know that’s how I like it!), it’s blend of mango, coconut and pineapple will make us think of that Caribbean island. Well…. Maybe if you’ve had more than a couple! Ha!
Caribbean Martini
- 1-1/2 ounces Absolut Mango vodka
- 3/4 ounce Malibu coconut rum
- 1 splash pineapple juice
- frozen pineapple chunks to use as “cubes”
Add all of your ingredients to a shaker with ice. Pour into glasses and add frozen pineapple chunks.
