There is really no time I’m never not focused on my diet and weight goals. It’s one of those things I’ve learned that I can’t let go of. I’ve accepted the fact that I’m vertically challenged, I have a slow metabolism, and I can gain weight just by looking at food. So therefore, I’m always keeping myself in check.
That being said, and being that I am a former Weight Watchers leader, I’m always creating new and interesting ways to modify recipes and create foods that are low in “points” (I talk in points, but that really means low calories.. it’s just a way of measuring that has stuck with me since my Weight Watchers days.). This is by far an ultimate diet recipe that is tasty, easy to make, healthy, and is beyond diet friendly.
This recipe is only two ingredients. I created it myself. Beyond easy. All you need is frozen broccoli that’s easily and quickly steamed and broth. That’s it. You can use ready canned broth or use bullion to make your own. I’ve used chicken broth or make it vegan and use vegetable. That’s what I used this time.
Zero Point Cream of Broccoli Soup
- 2 bags frozen broccoli pieces
- 2 cups broth, chicken or vegetable
Prepare bags of frozen broccoli. Put the cooked broccoli in a blender, and slowly add the broth to desired consistency. Begin by adding one cup and gradually add till you have it to the creaminess you’d like. Add more if it’s still too thick for you.
That’s it! Add salt if you feel like it needs it. This time I used vegetable bullion.
Eat this when you want something to fill you out, some comfort food, and are on a mission to shed a few pounds.
