Most of my cooking I do, I do these throw together, eyeballing dish and taste testing. Thanks to my mom being the most amazing teacher ever to me in so many things, this is how I learned to cook. Because that is how she cooked.
So throwing a few things together, I whipped up the yummiest topping for our pasta EVER! (Like so good I can just eat it in a bowl by itself!) I think it’s fairly healthy because I’m using fresh ingredients, nothing processed.
The goods…
Fresh sliced mushrooms
Grape tomatos
Fresh basil
Olive oil, White cooking wine, Jane’s Crazy Mixed Up Salt, Garlic Powder
First, begin by sauteeing the fresh mushrooms in olive oil.
Once they are softened, about 4 minutes, add in the sliced grape tomatoes.
Add in your seasoning.
Throw in a splash of your white cooking wine and let simmer till all the flavors are blended and the tomatoes are cooked but not over done and mushy.
Toss in your sliced fresh basil at the very end. Simmer for just another minute or so.
Serve it atop of your capellini or whatever pasta of your choice might be. Or in my case, just plain in a bowl!
