Say what? Um ya, taquitos. Not the frozen kind. But I made them to be LIKE the frozen kind so that we could have a little snack ready to go when we wanted something like that, but not the frozen ones. I donno what got into me that I was kinda craving them, but ya.
I remember seeing my friend Dora make them years ago, but I had totally forgotten, so I literally just kinda thought of what it might be to myself and did it. Hoping for the best, they didn’t turn out too bad after all!
These taquitos were pretty simple….
- 1 lb ground beef (super lean) or bison
- 1 packet taco seasoning
- shredded Mexican cheese
- low fat ranch dressing
- small white corn tortillas (mine were 150 cal for 3… not bad!)
1. Prepare meat in a skillet according to the taco seasoning packet. Put it in a bowl, add shredded cheese and toss it. Add some ranch dressing, not too much, but enough to give it a little bit of moisture. Toss it all together. … I don’t remember Dora doing the ranch part, but I did it to have that moisture.
Heat up the tortillas, 10 at a time maybe, in between 2 paper towels in the microwave for about 20 seconds to soften them up so they can be rolled without cracking.
Prepare a baking sheet lined with foil, sprayed with Pam, and begin rolling the taquitos. Place a teaspoon – tablespoon full of the meat mixture on one side of the tortillas and roll, placing seam side down on the baking sheet. Place the taquitos close together.
Spray Pam on the top of the taquitos and bake at 350 till golden, about 20 – 30 min.
I found this verde salsa that was super yummy I paired it with. Make these to have on hand as a snack, they’re perfect for a football watch party, great for kids when they come home from school, appetizers, whatever. Just yummy and simple, and really not too bad on the healthy aspect. Would be worse if they were flour tortillas for sure! I’d love to hear from you below if you try them out!
