Hi lovies! I’m always trying to be the good mommy, trying to come up with alternatives to feed them things they LIKE and things that are healthy at the same time…. and not be boring. So, here’s a twist on regular pancakes that are YUMMY, super easy to make, and way healthier than regular pancakes. Before we begin, I have to admit that being raised by a Greek mom whose dad owned restaurants and he just “whipped up” meals for his customers, lot’s of things really didn’t have a “recipe”. Lots of things we just “put together” and could eyeball it or go by just the taste test. So forgive me for not having EXACTS, but, this will be one of those!
So what to you need? Old bananas… the ones that are too soft now to just eat like a regular banana. We all have em. Mash em up in a bowl. Then add egg whites. A scoop of my FAVE Arbonne Vanilla Protein powder (it’s vegan and gluten free!), some dry old fashioned oatmeal.
Spray the cooking pan with a non-stick cooking spray, and pour the batter into the pan like you would for traditional pancakes. When you see them start to bubble, flip them over!
And the finished product? Health banana oatmeal protein pancakes!
These are a little crisp on the outside and softer on the inside because of the mashed up bananas. They also have the perfect amount of sweetness because of the vanilla protein powder too. Kiddos of course still love syrup. To my son, syrup for him and breakfast foods is like ranch on everything else!
