I’ve decided to make it a goal to share some healthy living tips and recipes in the beginning of the week since that’s when we tend to regain our focus on eating healthy and remembering that diet that we were on or at least supposed to be on. Am I right here? Don’t you agree that come Monday, it’s always “Ok time to diet again” kind of mentality? Of course, the weekend is probably the time of the week that we splurge most, so that’s understandable that on Monday we get back up in the saddle and regain our focus.
Today I’m sharing a twist on mini ice cream sandwiches. I’m all about making substitutions on the full calorie version into something lighter, without compromising too much of the taste. If it doesn’t taste good, why bother, right?
This is such a great and easy little sweet treat that has such little calories or points. I created this little treat myself back in my Weight Watchers days. All you need is mini rice cakes in some kind of a sweet flavor (versus savory), and fat free Cool Whip. Simple!
Mini Frozen Sandwich Treats
- 1 bag mini rice cakes, any sweet flavor
- 1 container Fat Free Cool Whip, thawed
Line a cookie sheet or flat surface with wax paper. Spread out a layer of mini rice cakes. Top with a dollop of cool whip, easiest using two teaspoons. Once you’ve topped all of the rice cakes, cover each one with another rice cake to create a “mini sandwich”. Place in the freezer till frozen. Put them all in a large ziplock freezer bag or freezer container and have them available whenever you’d like a frozen sweet treat.
