We had the fam over this weekend for an impromptu backyard barbecue. We leave in a few days to go out of town yet again, so entertaining isn’t top on my list of to-dos. But we just whipped up easy stuff… burgers, chicken, salad… and I had a craving for something I’ve never made before… grilled pineapple.
Of course my mom said, “Are you pregnant?” Of course that was the BIGGEST no ever! LOL! But something about it sounded SO good! And you know, Greeks aren’t used to seeing fruit on the grill. They’re used to lamb. So for them, this was a WHOLE new thing. They looked at it as if it were something from Mars. Like the “bundt cake” incident.
So here’s how I did it!
Grilled Pineapple
- One fresh pineapple
- brown sugar… like a cup…
- cinnamon
- large ziplock bag
Slice the fresh pineapple. Pour the brown sugar in ziplock and sprinkle in some cinnamon. Toss the pineapple. Grill for about 8 minutes per side, till you see them turning brown.
I served it as a side dish and it was TO DIE FOR. If you want to serve it as dessert, serve it warm and top with vanilla bean ice cream, or even just a dollop of Cool Whip. Doesn’t that sound delish?
So you don’t have to have a 4th of July gathering to make this grilled fruit delight. It’s seriously finger licking good! Once you see how simple this is but a taste that will be bigger than big, you’ll want to make it all the time.
