When you go somewhere out to eat and are like HOLY SMOKES WHAT IT THAT DIVINE THING THAT GOT A PARTY GOING WITH MY TASTEBUDS? That happened on vacation. Every day while at lunch at the Bar Jack at the Ritz Carlton, they served us these plantain chips and with it, this sauce.
This heavenly sauce.
I can’t say they gave me the recipe, but I put it all together from my knowledge of cooking, and my family said I NAILED IT! They didn’t have a name for it other than “the green sauce”, so I named it Green Goodness Sauce because it’s all goodness. I think you’re going to LOVE this!
Green Goodness Sauce
- 1 bunch fresh mint
- 1 bunch fresh cilantro
- 16 oz mayonaise
- 1 lime
- 3 – 4 garlic cloves
- 3/4 cup ice cubes
Place mayonaise, washed herbs and sliced garlic cloves into food processor. Puree. To thin out the sauce, add ice cubes slowly until you reach the consistency you desire.
This is AMAZING is all I can say. I was eating it and trying to get AS MUCH as I could onto a plantain chip and my family was yelling at me. They were like, “IT’S NOT SOUP!” I swore I was using the plantains as a Fritos Scoop chip. HA! B
We ate it with the plantain chips as it was served, but here’s how else we ate it.
- on my fish tacos
- lil man on his burger
- The Mister on his quesadilla
- as a dressing on my spinach, kale quinoa salad
Frankly, I see this on EVERYTHING. Make it for chicken, fish, pork, as a dip with veggies, pretty much anything else you can dream of.
I can’t say I’d substitute light or fat free mayo in this. It might change up the flavor too much. Sorry!
