On a recent girls night out, some of us shared some family traditions. One of the gals shared a SUPER easy and REALLY delish mac-n-cheese that I couldnt help but test for myself, and then of course SHARE with you!
She and her family would buy all kinds of fabulous cheeses for “picnic night in” and for guests as well. Whenever they had leftovers, they grated the cheeses, threw em all together, and whipped up this pan of comfort food.
Jackie’s Mac N Cheese
You’ll need some leftover blocks of cheese, pretty much anything will do. I didn’t have “leftover cheese”, so I got me some of these…
Did a little bit of this…
Then, after boiling elbow macaroni, layer it… pasta, cheese mixture, pasta, cheese mixture.
I actually added some shredded colby jack cheese with mine too.
Before baking it, beat 2 eggs and a cup of milk and pour it all over the top. Bake 350 for about 45 min till golden…
This is as SIMPLE as it gets, but boy is it good! I took a pic of The Mister hovering over the counter with his spoon in hand as he dug into it, and he swore he’d never talk to me again if I shared it. So I refrained. {grin} If you’re looking for light and healthy, keep walking. There is nothing light about this. It’s just full of yummy goodness!

How much macaroni did you use? Did you use an 8 oz box or 16 oz box?

Hi Shannon! I’ll be honest with you, I can’t remember! I know that I didn’t use measurements for this at all, I pretty much eyeballed it. And my girlfriend Jackie who shared this with us pretty much told us the same. Whatever leftover yummy cheeses they’d have in the house from entertaining, they’d throw it all together with the pasta and that’s it.
