Two fruit flavors I love combined are blueberry and lemon. Something about it that makes me go yummy…. and I thought it was time to bring out this classic lemon Italian liquor. Limoncello is perfect solo, sipped cold, or mixed into cocktails, so today I’ve prepared a slushier type refreshing drink great to sip on and enjoy the fused flavors of the lemon, blueberries and a simple syrup I made.
Having a simple syrup handy makes life so easy when you want to make some fun drinks. It takes a minute to prepare and stores easy. See below for the recipe on making the simple syrup to keep on hand.
Blueberry Limoncello
1 cup frozen or fresh blueberries
3 tbsp. simple syrup (recipe below) or sugar
3 tbsp. lemon juice
1 cup chilled limoncello liqueur or lemonade (regular or sparkling)
3/4 to 1 cup chilled club soda or sparkling water
In a blender, blend blueberries, simple syrup, and lemon juice with just enough limoncello to make a smooth slush. (For a firmer slush, pour into a small bowl and freeze for up to 2 hours.) .
Divide berry slush among 2 tall glasses (8 to 12oz. size), add equal portions limoncello; fill with club soda. Garnish with fresh berries on skewers; swizzle as you sip. If you want it a bit sweeter, add a little extra simple syrup to your liking. That’s what I did.
You can also prepare part of this recipe up to two weeks ahead of when you plan to use it. Just put the slush in a resealable freezer bag, seal, and freeze. To use, let stand at room temperature a few minutes to soften slightly.
Simple Syrup: Combine equal parts water and sugar. Stir over heat and bring to a boil. Cool to room temperature before using. I added a bit of lemon zest for a bit of bing to it. Just to flavor it up a bit.
All I know is TGIF! I’m SO happy it’s Friday… not that much changes THAT much with me on weekends, but still…. there’s something about Friday that I feel I can kick off my heels and toast to a week of success, growing, learning, and be thankful for all my blessings. And I can say ahhhhh! Cheers!
What are your plans this weekend?
