I said no way. She said way. I said prove it. She said ok.
And that’s what happened. And it was amazing. My apologies for not incredible presentation pictures. I rushed to grab my camera as this was going down halfway through it, and when it was complete and I wanted to grab more photos, her response was, “SERIOUSLY MOM?”. She was ready to eat, and she devoured it in no time.
No Carb Pasta
- 1 c. Shredded mozzarella cheese
- 1 egg yolk
Melt the mozzarella in a microwave bowl to where it’s all one melted piece of cheese, almost dough-like. Add the egg yolk and beat together till it’s combined very well, again like a ball of dough. Pat it flat onto a piece of wax paper, using wax paper, and spray it with non stick spray as you do. Cool in the refrigerator for several hours. Remove from the refrigerator, slice to the thinness you’d like to create the actual “noodles”. Drop into boiling water for one minute. Serve with your favorite sauce.
She created “pink sauce”, mixing marinara and alfredo. Nice, huh?
TO. DIE. FOR.
If you didn’t know this was made out of mozzarella, you’d never know it wasn’t true pasta. It’s that good. It’s great comfort food minus the guilt in my opinion. It isn’t hard to make. Make sure you have your wax paper on hand and a bit of that cooking spray and the rest is a piece of cake.
We can’t take all the credit for this recipe. She, of course, fount it on Buzz Feed. But it wasn’t a fail, it was a hit!
