No they’re not the no-bake cookies with peanut butter. No honey. No chocolate. But they are full of hearty goodness. And technically, they can be 3-ingredient cookies as well, as I’ve made them.
So meet these delightfully healthy 2 Ingredient Cookies, perfect for when you want something sweet, an after school snack for the kids, or really just SOMETHING to nibble on, but with wholesome good ingredients that are in alignment with your healthy diet. There are it.
It just so happened that I’m making these just before the kids are coming home from school, so this should be the true test!
You probably have everything you need to make these: oatmeal, and bananas that you haven’t eaten that you need to get rid of. Let’s face it, aren’t we ALL buying bananas and they’re turning bad? Here’s one use for them that’s not banana bread. HA!
2 Ingredient Cookies
- 1 c dry oats
- 1 soft banana
- berries (optional)
Mix the oats and softened banana with the back of a fork till it creates the “batter”. Add the berries if you’re using them. Form into small cookies on lined cookie sheets. Bake 350 for 15 min approximately, or until golden.
I used fresh blueberries, about a cup full, and I doubled the recipe and it ended up making 15.
They turned out moist and chewy and believe it or not, pretty filling. It won’t take a lot of those to satisfy a hunger binge. Are they junk food? No. They won’t fill that need! But they are wholesome and good for you. There’s no extra sugar or junk in it.
And… I think it was a hit with the kids!
