What’s for dinner? Blah blah.. same ole thing… Steak? Chicken? And the sides? French fries, corn on the cob, some pasta thingy? Well, something SUPER easy, that looks pretty fancy that my gang loves is my double baked potatoes.
I start with my russet potatoes.
… wash em really good and stab them with a fork about 3 or 4 times each. Then pop them into the microwave for 10 minutes.
Slice them in half and then scoop out the insides, leaving the shell intact.
Here’s where the creative side of you can come out. My basics I always include:
Butter, Cheese, Cream Cheese or Sour Cream, Salt.
I go light on the cream cheese or sour cream. You can even substitute a bit of ranch in place of either of those! Add chives if you want, bacon bits, how about salsa!!! Seriously, whatever you have in the fridge, add it! Leftover broccoli? Chop it up into bits and mix it all together. Trust me… it will be DELISH!
Mix it all up in a bowl, especially when the potatoes are fresh hot from the microwave so that the butter melts nicely and the ingredients blend way more together. Then scoop back INTO the shells!
(My lil guy won’t touch it if it has cheese, BUT he will eat quesadillas and pizza… go figure, right???)
I sprinkled a bit more cheese on top before throwing these in the oven at 350 for about 20 min or till golden.
The final dish?
These look really fancy, but I promise, this is one side dish that is so simple but gets oodles of compliments and people think you slaved over them! And, they pretty much go with any main course. Or… it can even be the main course on its own!
