I saw these morsels of crunchy fake tater tots and I know this isn’t anything new to the world, but I thought I’d give em a whirl for my family and see after all how hard these are to make and how tasty are they. I mean after all, we’re creating FAUX tater tots out of cauliflower.
I am always trying to shave calories from every corner…. probably because I always seem to make up for it in other corners! HA! So I thought this would be a great alternative especially as a side dish to some summertime barbecues. People will say WOW! LOOK AT WHAT KIM BROUGHT! SHE BROUGHT CAULI-TOTS! LET’S DIG IN! (ha!) But in all seriousness, these are baked, not fried, and instead of potatoes, we are substituting cauliflower. So lets give em a try!
Cauli-Tots
- 3 cups of cooked cauliflower
- 1 egg
- 3/4 cup breadcrumbs (I thought I had breadcrumbs, but instead I used crumbles of stuffing!)
1/2 cup low fat shredded cheese (I used a Mexican blend I had )
Salt and pepper to taste (I used Crazy Mixed Up Salt)
Preheat oven to 350. Finely chop cooked cauliflower and place in a bowl. Add the rest of the ingredients and combine well. Roll into little tot sized shapes and place them on baking sheets sprayed with cooking spray. Cook for 7 – 10 minutes till golden, then flip them over till golden.
So this particular night I served this little bites with ribs I had made as well. The family did like these, but of course it’s that whole “I’m expecting to bite into a potato” look on their face when they do. So, yes, I thought they were super tasty, and the flavors of the cheese and seasonings and breadcrumbs definitely made cauliflower much more flavorful. I like cauliflower to begin with so for me, even plain cauli isn’t an issue. But if you’re looking for a different way to prepare this white veggie and go carb free, here is something for you to try.
