Being that this is the first Monday of 2014, I decided to share this little bit about myself and found it appropriate, being that probably most people with resolutions of diet and exercise will begin today.
Everyone says the most important meal of the day is breakfast and I tend to agree with the experts. Having a good breakfast sets your day off with a good start. You get your metabolism going, you get your energy up, you feed your body the fuel it needs to get it going for the day. Much like a car with new fresh tank of gas that was on empty from the day before.
So I decided to pre-plan my breakfasts for the upcoming week because once school begins again, I drop them off, then I get busy doing different things. Some days I’m good about breakfast, others not so good. Some days I make a shake, others I make my eggs, others I wait so long it’s almost lunchtime! So I thought, lemme preplan and premake the goods. That way I KNOW I’ll have a good filling breakfast that’s in line with my goals, no excuses! So here we are!
I decided to make my spinach, mushroom and cheese omelets. Five of em. Premake up, pull them out of the refrigerator and nuke em. Loaded with protein to keep me fuller longer, using one whole egg along with egg white (because there’s tons of goodness in that yolk!), spinach because it’s da bomb for you, and I love mushrooms and ANYTHING with cheese (just a sprinkle to mesh it all together).
I prep several omelets at a time to make it go faster and almost create a little assembly line….
I have my little containers all lined up ready to go so as I make them one by one they have their spot waiting for them…
Some are prettier than others! HA!
And I’m set for the week! No excuses for not having a healthy breakfast now, right?

You know how I can’t throw stuff away? Those are containers from Chinese take-out! LOL! But they are the PERFECT size for things like this, it was a shame to throw em away. 😉

Love it and the containers…ha …Great idea and everyone gets so tired of doing the shakes in the am and if we are working out the omelets are a great idea too! Love the pics! 🙂
