My daughter requested I make spinach balls not too long ago to go along with dinner. I felt like those were more hors d’oeuvres, and in pulling several recipes together, I created my own, and instead created these patties. I felt like they were more “side dish” type of an item to serve with chicken, fish, beef, anything. And the extras made a great little snack!
Spinach Patties
- 2 bags frozen spinach
- 2 large egg
- 1 stick butter
- 1 1/2 cup parmesan cheese
- 2 cup Italian breadcrumbs
- garlic powder
Mix all ingredients in a bowl. Form into flat patties, about 3″ in diameter. Place on foil on baking sheets sprayed with cooking spray. Bake 425, 15 minutes, or until golden.
Mine turned a little too golden, but I think they were super tasty. I can’t say they would have been as good had they been cooked less. The only salt in this recipe comes from the parmesan and whatever the breadcrumbs has.
Seriously, these were so good, I can’t wait to make them again, and I’ll be making them often. They were beyond easy, simple ingredients, not complicated prep work, and not really very fattening in my opinion. And it’s a tasty way to get some spinach in your diet.
