Now that school is back in session, I’ve made a promise to myself that I’m going to try to do better as mother hen and be better about preparing dinner for the crew. We all get busy, I work from home, which is nice and flexible, but still, I consider myself busy working, not eating bon bons on the sofa. … While many days I wish I WAS eating bon bons on the sofa! LOL!… but often I’ve found I look up from my errands and appointments and I’m like OMG where did the time go? It’s dinner ALREADY? What’s for dinner? Takeout. Not good. I mean I don’t mind it, but what happened to my priorities as a momma bear? When they were babies, I would NEVER compromise their health and nutrition with convenience. I mean I did, but not ALL the time as it has seem to become the norm now. So I said to myself, “Self, somethings gotta change.” So here we are.
And being it’s Tuesday, tonight for dinner we’re having Taco Tuesday. This recipe is like by FAR the easiest thing EVERRRRRR… as in 3 ingredients. Complicated stuff, right? All you need is a crockpot, set it and forget it. Does it get harder than that? I think not.
Easy Crockpot Chicken Tacos
- Boneless skinless chicken breasts, thawed.
- 1 packet taco seasoning
- 1 jar salsa
Spray the inside of your crockpot with nonstick spray. Lay your chicken on the bottom. Sprinkle the taco seasoning on top. Pour the salsa. Set on auto and turn it off 4 – 6 hours. Pull it apart with a fork and a knife.
I love this recipe because it is the most versatile chicken. Use in tacos, quesadillas, nachos or Mexican salad. Even in soups! It’s really pretty endless. I’m trying to eat more protein than carbs, so this is my dinner….
So now I can have one home cooked meal under my belt for the fam. What do you think?
