You and I have had this discussion before. Being vertically challenged isn’t easy. I’m always keeping tabs on what I eat. Sometimes I keep tabs and watch it go down the hatch! HA! But seriously, the older I get, the more I try to really keep on top of myself because something as little as 5 pounds shows way more than someone who is inches taller than me.
So I’m always coming up with ways to have easy throw together meals that take little effort and time that are healthy. And this is one of them.
If you’re looking for low carb, nutritious, high protein, no prep work, this is for you. I call it “Simple Stir Fry 1, 2, 3” because it truly is that. I buy ingredients that are precut and washed and ready to go. Here’s my latest rendition.
Simple Stir Fry 1, 2, 3
- Bag of bean sprouts
- Bag of broccoli cole slaw mix
- Container of fresh mushrooms, sliced
- A bit of oil of your choice (I use olive oil on everything)
- Jane’s Crazy Mixed Up Salt
Spray a bit of cooking spray in a large wide cooking pan. Drizzle a bit of oil in there as well. Heat and add in your veggies. Sprinkle your season salt. Saute on medium heat. Toss occasionally. Will be ready when it’s softened and turned light brown, about 8 minutes.
You can do precut bags of shredded cabbage for coleslaw, add some leftover chicken or beef for added protein. I love the mushrooms though for the low calories and high protein. Did you know mushrooms are SO SO SO good for you? Read about them HERE. Add in any other veggies you want, colored peppers, zucchini, the sky’s the limit. I do NOT use soy sauce as a personal choice because I’m trying to watch my sodium. My season salt does the trick and I encourage you to try it. It’s SO flavorful, with hints of garlic and onion and other flavors, seriously, it’s practically the ONLY thing I use on everything. I swear by it!
Make this as a main course like me, or use it as a side dish.
